Method
- Place a large saucepan over medium heat and add vegan butter2 tbsp and vegetable oil1 tsp. Once the vegan butter is melted, add onion1. Fry for about 10 minutes, stirring often until the onion is beginning to brown.
- Add garlic2 cloves and bay leaves2 and fry for a further 2 minutes, stirring often.
- Add plain white flour4 tbsp and stir to make sure all the pieces of onion are coated. Add about vegetable stock3 cups and stir well until a thick paste forms. Keep adding the stock little by little, stirring constantly.
- Once all the stock is added, reduce the heat to low and cook the gravy for a further 5 minutes, stirring constantly, or until the gravy has thickened to the desired consistency. Add dark soy sauce1 tbsp then season to taste with sea salt and black pepper.
- Remove from the heat, pass the gravy through a sieve and serve or keep over a very low heat, stirring occasionally to keep warm.
